  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • A few dashes of hot sauce (optional)

Instructions

  1. Rinse mixed greens and pat dry; place in a large bowl.
  2. Halve cherry tomatoes and add to the bowl.
  3. Dice cucumber and bell pepper; add along with shredded carrots.
  4. Thinly slice red onion; soak in cold water if desired for milder flavor, then add.
  5. Mix in corn kernels (drained if canned) and diced avocado gently.
  6. Crumble feta cheese over the salad.
  7. In a separate bowl, whisk together mayonnaise, Greek yogurt, vinegar, mustard, garlic powder, salt, and pepper until smooth; add hot sauce if desired.
