  • 1.5 lbs Chicken Breast/Thighs
  • 1/4 cup Olive Oil
  • 1/4 cup Fresh Lemon Juice
  • 2 Tbsp Fresh Dill
  • 2 cloves Garlic
  • 1 tsp Dried Oregano
  • Salt and Pepper
  • 4 cups Cooked Quinoa or Rice
  • 1 large Cucumber
  • 1 pint Tomatoes
  • 1/2 cup Red Onion
  • 1/2 cup Crumbled Feta Cheese
  • 1/4 cup Kalamata Olives

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, dill, garlic, oregano, salt, and pepper in a bowl. Toss cubed chicken in the marinade and let sit for at least 30 minutes.
  2. Preheat your oven or grill to 400°F. Bake the marinated chicken for 18–20 minutes or grill for about 4–5 minutes per side until cooked through.
  3. Assemble your bowls with cooked quinoa or rice as the base, topped with diced cucumber, halved tomatoes, sliced red onion, and cooked chicken.
  4. Finish by adding crumbled feta cheese and kalamata olives. Drizzle with extra olive oil or lemon juice if desired.
