  • 2 large ripe peaches
  • 1 cup glutinous rice flour (or mochiko flour)
  • 1/4 cup sugar
  • 1 cup water
  • 1/2 cup cornstarch (for dusting)

Instructions

  1. Boil water in a medium pot. Cut a small cross on the bottom of each peach and boil for one minute.
  2. Transfer to cold water, peel, and halve the peaches.
  3. In a microwave-safe bowl, mix glutinous rice flour and sugar with water until smooth. Cover with a wet paper towel and microwave three times for one minute each, stirring in between until thickened.
  4. Dust your work surface with cornstarch and roll out the mochi dough to about 1/6-inch thickness. Divide into four portions.
  5. Encase each peach half in mochi, dusting with cornstarch to prevent sticking.
