- 1 1/2 cups graham cracker crumbs

- 5 Tbsp butter (melted)
- 1 tsp vanilla
- 4.4 oz white chocolate bar (goes on top of pressed crust)
- 24 oz cream cheese packs (softened)
- 3/4 cup heavy whipping cream
- 2 tbsp plain yogurt
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 Tbsp corn starch
- 1/2 cup white granulated sugar
- 6 oz raspberries
- 3/4 cup white granulated sugar (for the swirl)
- 1 Tbsp lemon juice
- 1 tsp vanilla extract (for the swirl)
- 1/2 Tbsp cornstarch (mixed with a splash of cold water)
- 4 oz white chocolate (bar or melts) (melted)
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs, dark brown sugar, melted butter, and vanilla in a bowl; press into a springform pan.
- Melt white chocolate and pour over crust; let set.
- Beat cream cheese until smooth, then mix in heavy cream, yogurt, eggs, vanilla extract, corn starch, and sugar.
- In a saucepan, cook raspberries with sugar and lemon juice until thickened; swirl into cheesecake batter.
- Layer batter and raspberry mixture in the pan; bake for about 85 minutes until slightly jiggly in the center.
- Cool gradually in the oven; refrigerate for four hours or overnight before serving.
