Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

- Spread the cauliflower on the baking sheet and roast for 25–30 minutes, flipping halfway through for even crispness.
- Meanwhile, combine lemon juice, lemon zest, maple syrup, soy sauce, garlic powder, and black pepper in a saucepan; bring to simmer.
- Mix remaining cornstarch with water to create a slurry; whisk into the simmering glaze until thickened.
- Once roasted, combine cauliflower with the glaze in a bowl and toss to coat. Serve immediately with your choice of garnishes.
