  • 1/2 teaspoon pepper
  • 1 teaspoon smoked paprika
  • 2 cups yellow onion (finely diced, 1 large onion)
  • 1 tablespoon finely minced garlic (4 cloves)
  • 2 tablespoons flour
  • 5 cups chicken broth
  • 4 cups baby gold potatoes (diced, unpeeled)
  • 1 (15.5-ounce) can navy beans
  • 1/2 cup sun-dried tomatoes (finely diced, plus more for garnish)
  • 2 cups half-and-half
  • Basil pesto

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add ground Italian sausage seasoned with salt, pepper, and smoked paprika. Cook until browned.
  2. Remove the sausage using a slotted spoon, then sauté diced onions and minced garlic in the same pot for 3–5 minutes.
  3. Stir in flour and gradually add chicken broth; bring to a boil before adding diced potatoes.
  4. Reduce heat, cover, and cook until potatoes are tender (about 15 minutes).
  5. Stir in navy beans and sun-dried tomatoes; simmer uncovered for 5 minutes.
  6. Mix in half-and-half and return the sausage to the pot. Serve hot with optional basil pesto.
