Ingredients

  • 1.5 lbs sirloin or ribeye steak
  • Salt and freshly cracked black pepper
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter (divided)
  • 6 cloves garlic (minced)
  • 1 cup heavy cream
  • 0.5 cup freshly grated parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Pat steak cubes dry and season with salt and pepper; let rest at room temperature for 20–30 minutes.
  2. Heat olive oil in a cast-iron skillet over high heat. Sear steak bites for 2–3 minutes per side until browned; transfer to a plate.
  3. Lower heat to medium and add 2 tbsp butter and minced garlic to the skillet; sauté for 30 seconds.
  4. Return steak bites to the skillet, toss to coat, then remove again.
  5. Melt remaining butter, add minced garlic, then pour in heavy cream and simmer for 2–3 minutes until thickened.
  6. Stir in parmesan cheese until smooth; return steak bites, tossing gently in sauce.
  7. Garnish with parsley before serving.
