  • 1.5 lbs sauerkraut (drained and rinsed)
  • 1/4 cup brown sugar
  • 1.5 cups apple slices
  • 1 bag wide egg noodles
  • 2 tbsp unsalted butter
  • 1.5 tbsp high-heat oil
  • Salt to taste
  • Black pepper to taste
  • 2.5 tbsp chicken soup base
  • 2 garlic cloves (finely minced)
  • 1 cup water
  • 1/2 yellow onion (diced into 1/2-inch pieces)

Instructions

  1. Season the pork loin roast with salt and pepper. Heat oil in a heavy-bottomed pot over medium-high heat and sear the pork on all sides until golden brown (about 4-5 minutes per side).
  2. Reduce heat to medium, then add drained sauerkraut, chicken soup base, brown sugar, minced garlic, apple slices, diced onion, water, and additional seasoning. Stir gently.
  3. Bring to a boil; cover and reduce heat to low. Simmer for about 90 minutes until the pork is tender.
  4. Meanwhile, cook the wide egg noodles in salted boiling water according to package instructions until al dente. Drain and toss with unsalted butter.
  5. Slice the pork and serve it over the noodles topped with the sauerkraut mixture. Garnish with fresh parsley.
