- 2.5 lb pork loin roast
- 1.5 lbs sauerkraut (drained and rinsed)
- 1/4 cup brown sugar
- 1.5 cups apple slices
- 1 bag wide egg noodles
- 2 tbsp unsalted butter
- 1.5 tbsp high-heat oil
- Salt to taste
- Black pepper to taste
- 2.5 tbsp chicken soup base
- 2 garlic cloves (finely minced)
- 1 cup water
- 1/2 yellow onion (diced into 1/2-inch pieces)
Instructions
- Season the pork loin roast with salt and pepper. Heat oil in a heavy-bottomed pot over medium-high heat and sear the pork on all sides until golden brown (about 4-5 minutes per side).
- Reduce heat to medium, then add drained sauerkraut, chicken soup base, brown sugar, minced garlic, apple slices, diced onion, water, and additional seasoning. Stir gently.
- Bring to a boil; cover and reduce heat to low. Simmer for about 90 minutes until the pork is tender.
- Meanwhile, cook the wide egg noodles in salted boiling water according to package instructions until al dente. Drain and toss with unsalted butter.
- Slice the pork and serve it over the noodles topped with the sauerkraut mixture. Garnish with fresh parsley.
