  • 1 block (8 oz) feta cheese
  • 1 bag (12-16 oz) frozen spinach, thawed
  • 1 cup plain whole-milk Greek yogurt
  • 1/2 cup mayonnaise (preferably avocado oil mayo)
  • 2 cloves garlic, grated
  • 1 cup sliced pepperoncini peppers, roughly chopped
  • 1.5 cups grated fresh mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Grease an 8×8-inch baking dish or small cast iron skillet.
  2. In a large bowl, crumble feta cheese with a fork. Wring excess moisture from thawed spinach using a clean kitchen towel and add it to the bowl.
  3. Mix in Greek yogurt, mayonnaise, grated garlic, crushed red pepper flakes, chopped pepperoncini, and 1 cup mozzarella until well combined.
  4. Transfer the mixture to the greased dish and top with remaining mozzarella. Bake for 26-30 minutes until bubbly and golden brown; broil for an additional 2 minutes for extra crispness.
