  • 1 pound large mushrooms (Cremini or Portobello)
  • 1 cup cooked chicken, diced
  • 5 ounces fresh spinach, chopped
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup breadcrumbs (Panko preferred)
  • 1/2 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • Olive oil for sautéing

Instructions

  1. Preheat oven to 375°F (190°C). Clean mushrooms and remove stems; chop stems finely.
  2. In a skillet, heat olive oil over medium heat. Sauté onion for 3–4 minutes until softened, then add garlic and chopped mushroom stems; cook until browned.
  3. Add spinach to the skillet in batches until wilted.
  4. Transfer mixture to a bowl; mix in cream cheese until smooth.
  5. Stir in chicken, cheeses, breadcrumbs, salt, and pepper. Adjust seasoning as needed.
  6. Spoon filling into each mushroom cap; arrange on a baking dish.
  7. Sprinkle with extra breadcrumbs and Parmesan, drizzle with olive oil if desired.
  8. Bake for 20–25 minutes until mushrooms are tender and tops are golden brown.
