Ingredients
- 1.5 cups sushi rice
- 2 cups water
- 1 teaspoon salt
- 3 tablespoon rice vinegar
- 1 tablespoon granulated sugar
- 1 teaspoon sesame oil
- 1 pound sushi-grade ahi tuna, finely chopped
- 3 tablespoons Japanese kewpie mayonnaise
- 2 tablespoons Sriracha
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
- 1–2 teaspoons lime juice
- Avocado, thinly sliced
- Toasted sesame seeds
- Chives or scallions, minced
- Jalapeño or serrano pepper, sliced
Instructions
- Rinse sushi rice under cold water until clear. Cook in a rice cooker with water and salt.
- Once cooked, mix rice vinegar, sugar, and sesame oil into warm rice until well combined.
- Shape cooled rice into rectangles (2×3 inches).
- In a separate bowl, combine chopped tuna, kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice.
- Top each rice rectangle with spicy tuna mixture and garnish with avocado slices and sesame seeds.
