  • 4 burger buns (preferably brioche)
  • Fresh cilantro, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, mix gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper to create the marinade.
  2. Marinate chicken thighs for at least one hour or overnight.
  3. Prepare slaw by combining shredded cabbage and carrots; mix mayonnaise, lime juice, and optional sriracha in another bowl and combine.
  4. Grill marinated chicken on medium-high heat for 6–7 minutes per side until cooked through (165°F internal temperature).
  5. Toast buns until golden brown.
  6. Assemble sandwiches by placing grilled chicken on buns, topping with slaw, and garnishing with cilantro and sesame seeds.
