  • 2 tablespoons tomato paste
  • 2 cans (14.5 oz each) fire-roasted diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons masa harina or cornmeal (for thickening)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear beef cubes until browned on all sides; transfer to slow cooker.
  2. In the slow cooker, combine onion, tomato paste, diced tomatoes, tomato sauce, and beef broth. Add spices and mix well.
  3. Cover and cook on low for 7-8 hours or high for 3-4 hours. Stir in masa harina or cornmeal 30 minutes before serving to thicken.
