  • 2 tablespoons olive oil
  • 1 large yellow onion (diced)
  • 2 tablespoons tomato paste
  • 2 cans (14.5 ounces each) fire-roasted diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 2 cups beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 2 tablespoons masa harina or cornmeal (for thickening)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Sear the beef chunks in batches until browned on all sides. Transfer to a slow cooker.
  2. Add onion, tomato paste, diced tomatoes, tomato sauce, beef broth, and all spices to the slow cooker. Mix well.
  3. Cover and cook on low for 7-8 hours or high for 3-4 hours. About 30 minutes before serving, stir in masa harina or cornmeal to thicken.
