  • 6 dried guajillo chiles
  • 2 dried ancho chiles
  • 3 lbs beef stew meat
  • 1 small yellow onion
  • 2 tsp garlic powder
  • 1 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp sea salt
  • 2 dried arbol chiles
  • 1/2 tsp black pepper
  • 2 tbsp avocado oil
  • 2 bay leaves
  • 1/4 cup gluten-free all-purpose flour

Instructions

  1. Rinse and prepare the dried chiles by removing stems and seeds. Toast lightly in a skillet for 2-3 minutes until fragrant. Blend with 1 cup of beef broth until smooth.
  2. Brown the coated beef stew meat in avocado oil in batches over medium-high heat (5-7 minutes per batch).
  3. In the slow cooker, combine browned beef, chopped onion, blended chile mixture, remaining broth, garlic powder, cumin, oregano, sea salt, black pepper, arbol chiles, and bay leaves.
  4. Cover and cook on low for about 4 hours until the beef is tender.
  5. Remove bay leaves before serving; enjoy with your favorite toppings.
