  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1/2 cup fresh orange juice
  • 4 plum tomatoes (diced)
  • 2 jalapeño peppers (minced)
  • 1 cup diced jicama
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 1 avocado (diced)
  • Kosher salt and fresh ground pepper to taste

Instructions

  1. Chop the shrimp into bite-sized pieces and place them in a mixing bowl.
  2. In another bowl, whisk together lemon juice, lime juice, and orange juice; pour half over the shrimp and let marinate for 15 minutes.
  3. Add diced tomatoes, jalapeños, jicama, cilantro, and red onion to the shrimp; toss gently and marinate for another 10 minutes.
