  • 1 lb large raw shrimp
  • 2 ripe avocados
  • 1/2 cup corn kernels
  • 1 medium English cucumber
  • 1/2 medium red onion
  • 1/2 lb Roma tomatoes
  • 1 medium romaine lettuce
  • 3 Tbsp olive oil
  • Juice of 1 lemon (about 3 Tbsp)
  • 1/2 bunch cilantro

Instructions

  1. Prepare the shrimp by seasoning with cajun spice, garlic, and salt in a bowl.
  2. In a non-stick pan over medium-high heat, melt butter and cook the shrimp for about 2 minutes on each side until pink and opaque. Remove from heat.
  3. Chop the romaine lettuce and line it in a large salad bowl or platter.
  4. Layer the remaining salad ingredients along with cooked shrimp on top of the lettuce.
  5. For the dressing, whisk together olive oil, lemon juice, chopped cilantro, salt, and pepper in a small bowl. Drizzle over the salad and toss gently before serving.
