Ingredients
- 1 lb large raw shrimp
- 2 ripe avocados
- 1/2 cup corn kernels
- 1 medium English cucumber
- 1/2 medium red onion
- 1/2 lb Roma tomatoes
- 1 medium romaine lettuce
- 3 Tbsp olive oil
- Juice of 1 lemon (about 3 Tbsp)
- 1/2 bunch cilantro
Instructions
- Prepare the shrimp by seasoning with cajun spice, garlic, and salt in a bowl.
- In a non-stick pan over medium-high heat, melt butter and cook the shrimp for about 2 minutes on each side until pink and opaque. Remove from heat.
