  • 4 large russet potatoes
  • 1 pound ground beef or lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup milk
  • 2 tablespoons butter
  • ¾ cup frozen peas

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub and dry the russet potatoes. Prick each potato several times with a fork, rub with olive oil and sprinkle with salt.
  3. Bake directly on an oven rack for 45–50 minutes until fork-tender.
  4. In a skillet over medium heat, brown the ground beef/lamb; drain excess grease.
  5. Add onion, carrots, and garlic; cook until softened (about 5 minutes). Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  6. Pour in beef broth; simmer for approximately 10 minutes. Add frozen peas and remove from heat.
  7. After baking potatoes, slice off the top third and scoop out most of the insides into a bowl. Mash with milk, butter, garlic powder, salt, and pepper.
  8. Spoon the meat filling into each hollowed potato shell and top with mashed potatoes.
  9. Bake again at 400°F for an additional 10–15 minutes until golden brown.
