- 4 cups day-old cooked jasmine rice
- 12 oz medium shrimp (peeled & deveined)
- 6 oz crab meat (fresh or imitation)
- 2 large eggs (beaten)
- ½ cup finely diced carrots
- ½ cup green peas
- ½ cup diced red bell pepper
- ¼ cup chopped green onions
- 3 cloves garlic (minced)
- 1 tbsp fresh ginger (minced)
- Soy sauce, oyster sauce, sesame oil
Instructions
- Marinate shrimp and crab in soy sauce, sesame oil, lemon juice, minced garlic, grated ginger, and white pepper for 10–15 minutes.
- Chop vegetables into small pieces for even cooking.
- Heat a wok over high heat; add vegetable oil until shimmering.
- Stir-fry marinated seafood for about 2–3 minutes until shrimp turns pink; remove from wok.
- Add garlic, ginger, onions to the wok; stir-fry until fragrant.
- Add carrots, peas, bell peppers; stir-fry until crisp-tender.
- Push veggies to one side; scramble beaten eggs on the other side.
- Mix in cold day-old rice; break apart clumps and toss with veggies and eggs.
- Add soy sauce, oyster sauce, sesame oil; stir well to coat rice evenly.
- Return seafood to the wok; combine everything on high heat for another minute.
- Garnish with green onions and serve warm.
