- 1 cup quinoa, rinsed
- 2 cups water
- 3 garlic cloves, sautéed

- Salt
- Pepper
- Fresh parsley
- Thyme
- Rosemary
Instructions
- Preheat the oven to 400°F (200°C).
- Toss butternut squash with olive oil, salt, pepper, thyme, and rosemary. Spread on a baking sheet and roast for 25–30 minutes until golden and tender.
- In a medium saucepan, bring water to boil. Add quinoa; reduce heat to low and simmer for 15 minutes until fluffy.
- Heat olive oil in a cast iron skillet over medium-high heat. Season steak with salt and pepper; sear for 2–3 minutes per side until browned.
- Blend sautéed garlic with cream or yogurt and herbs until smooth.
- Assemble bowls: layer quinoa at the bottom, top with roasted squash and seared steak, then drizzle with sauce.
