  • 10 tbsp Unsalted Butter (melted)
  • 32 oz Cream Cheese (softened)
  • ¾ cup White Sugar
  • ½ cup Liquid Honey
  • 3 Large Eggs (room temperature)
  • ¾ cup Heavy Cream
  • ¾ cup Sour Cream
  • Kosher Salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes.
  3. In another bowl, beat cream cheese and sugar until smooth. Add honey, eggs, and mix gently.
  4. Fold in heavy cream and sour cream until blended.
  5. Pour filling into cooled crust and bake for about 90 minutes or until set around the edges.
  6. Cool in the oven with the door ajar for an hour, then chill in the fridge for at least four hours before serving.
