  • 2/3 cup pesto (jarred or homemade)
  • 1/4 cup grated Parmesan cheese

  • lemon juice
  • kosher salt
  • black pepper

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Place salmon filets skin-side down on the prepared sheet. Brush with olive oil and lemon juice; season with salt and pepper.
  3. Roast in the cold oven for 20 minutes until the salmon flakes easily at an internal temperature of 145°F.
  4. Meanwhile, boil salted water in a large pot. Cook pasta until al dente as per package instructions; reserve some pasta water before draining.
  5. Return drained pasta to the pot. Stir in pesto, Parmesan cheese, and reserved pasta water to achieve desired sauce consistency.
