  • 50 grams granulated sugar
  • 1/4 cup freeze-dried raspberries
  • 3/4 cup fresh raspberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 6 tbsp unsalted butter

Instructions

  2. Process almond meal and powdered sugar until fine, then sift.
  3. Whip egg whites to stiff peaks, gradually adding granulated sugar.
  4. Fold the almond mixture into the whipped egg whites gently until combined.
  5. Pipe small rounds on prepared sheets and let them rest for 30 minutes.
  6. Preheat oven to 300°F (150°C) and bake macarons for about 15 minutes.
  7. Prepare raspberry syrup by simmering fresh raspberries, sugar, and lemon juice, then strain.
  8. Beat room temperature butter with cooled syrup until fluffy for filling.
  9. Assemble by piping buttercream between two macaron shells.
