  • 812 medium roasting potatoes
  • 200 g crumbled feta cheese
  • 3 tbsp capers or sliced black olives
  • 2 large garlic cloves, sliced
  • 1 red onion, thinly sliced
  • Fresh rosemary sprig
  • 1 lemon, cut into quarters
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200C (400F) and drizzle olive oil in a large skillet or roasting tray.
  2. Rinse the potatoes and pierce them with a knife to allow steam to escape.
  3. Microwave the pierced potatoes covered with damp paper towels for 7-12 minutes until tender.
  4. Smash each potato gently in the skillet, ensuring they retain their shape.
  5. Drizzle with olive oil, season with salt and pepper, and add garlic, rosemary, and lemon wedges.
  6. Roast for about 10 minutes until golden brown.
  7. Remove from the oven, sprinkle with feta cheese and onions, then return for an additional 5 minutes.
  8. Squeeze roasted lemon juice over the potatoes before serving.
