  • 3.5 cups cottage cheese
  • 0.5 cup cheddar cheese (shredded)
  • 1 avocado (sliced)

Instructions

  1. Prepare pico de gallo by combining diced tomatoes, onion, jalapeños, lime juice, salt, pepper, and cilantro in a bowl. Set aside.
  2. In a large skillet over medium-high heat, brown the ground beef for 5-7 minutes until fully cooked. Add taco seasoning and water; mix well and simmer for an additional 1-2 minutes.
  3. To assemble each bowl, start with about 1.25 cups of cottage cheese as the base. Top with seasoned beef.
  4. Sprinkle shredded cheddar cheese over the beef and add pico de gallo on top.
