  • 10–12 canned pineapple rings, well-drained and patted dry
  • Additional sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy (about 3-5 minutes).
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture until a soft dough forms.
  5. Roll dough into balls (about 1½ tablespoons each) and flatten slightly before placing on a prepared baking sheet spaced two inches apart.
  6. Top each cookie with a pineapple ring, pressing gently.
  7. Sprinkle additional sugar over the top before baking.
  8. Bake for 12–14 minutes or until the edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
