- 10–12 canned pineapple rings, well-drained and patted dry
- Additional sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy (about 3-5 minutes).
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture until a soft dough forms.
- Roll dough into balls (about 1½ tablespoons each) and flatten slightly before placing on a prepared baking sheet spaced two inches apart.
- Top each cookie with a pineapple ring, pressing gently.
- Sprinkle additional sugar over the top before baking.
- Bake for 12–14 minutes or until the edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
