- 1/4 cup bread flour
- 3 2/3 cups bread flour
- 1/3 cup granulated sugar
- 2 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1/3 cup whole milk (room temperature)
- 1/3 cup heavy cream
- 1 large egg (room temperature)
- Tangzhong (from recipe above)
- 1 teaspoon vanilla paste or extract
- 6 tablespoons unsalted butter (softened)
- 2/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup all-purpose flour
- 3 tablespoons unsalted butter (melted)
- 4 tablespoons unsalted butter (room temperature)
- 2 ounces cream cheese (room temperature)
- 1 cup powdered sugar
- 2 1/2 tablespoons heavy cream
Instructions
- Prepare the peach filling by mixing cubed peaches, sugar, lemon juice, cornstarch, and water in a bowl. Set aside.
- In a mixing bowl, combine water, bread flour, sugar, yeast, and salt; add milk, heavy cream, egg, tangzhong, and vanilla. Mix until combined.
- Gradually add remaining bread flour to form a soft dough. Knead on a floured surface for 10 minutes until smooth.
- Place dough in a greased bowl covered with plastic wrap to rise for about 90 minutes until doubled in size.
- Roll out the dough into a rectangle; spread melted butter and sprinkle cinnamon sugar over it.
- Spoon peach filling over the dough and roll tightly into a log; cut into slices.
- Place slices in a greased baking dish and let rise again for 30 minutes before baking at 350°F (175°C) for 30 minutes until golden.
- Prepare cream cheese glaze by mixing melted butter with cream cheese; add powdered sugar and heavy cream until smooth.
- Drizzle glaze over warm rolls before serving.
