  • 5 chicken thighs (skin-on, bone-in)
  • 12 lemons (zest + 4 tbsp juice)
  • 1 tbsp dried oregano
  • 4 garlic cloves (minced)
  • 1 small onion (finely diced)
  • 1 cup long-grain rice (uncooked)
  • 1.5 cups chicken broth
  • Fresh parsley or oregano for garnish

Instructions

  1. Marinate the chicken by combining it with lemon zest, juice, oregano, garlic, salt, and olive oil in a ziplock bag. Let sit for at least 20 minutes or overnight.
  2. In a heavy-bottomed pot, sauté the onion in olive oil until translucent.
  3. Sear marinated chicken thighs skin-side down until golden brown on both sides.
  4. Add rice and liquids to the pot; stir well.
  5. Place chicken back on top of rice, bring to a boil, then cover and simmer for 30-35 minutes until rice is tender.
  6. Fluff the rice with a fork and garnish before serving.
