Ingredients

- 1 cup long-grain rice (uncooked)
- 1.5 cups chicken broth
- Fresh parsley or oregano for garnish
Instructions
- Marinate the chicken by combining it with lemon zest, juice, oregano, garlic, salt, and olive oil in a ziplock bag. Let sit for at least 20 minutes or overnight.
- In a heavy-bottomed pot, sauté the onion in olive oil until translucent.
