Ingredients
- 3 lbs organic chuck roast
- 4 dried guajillo peppers
- 4 dried ancho chiles
- 1 onion
- 4 garlic cloves
- 12 organic corn tortillas
- Shredded Oaxaca cheese
- Fresh cilantro
- Pico de Gallo
Instructions
- Soak guajillo and ancho chiles in hot water for 15 minutes until softened. Blend with onion, garlic, crushed tomatoes, beef stock, apple cider vinegar, bay leaves, and spices until smooth.
- In a large pot, heat olive oil over medium heat. Season chuck roast with salt and pepper; brown on all sides (5-7 minutes). Add blended sauce from Step 1 and simmer on low heat for 150 minutes until the beef is tender.
- Shred cooked beef and heat corn tortillas in a skillet until warm. Assemble tacos by adding shredded beef and Oaxaca cheese; cook until crispy.
