Ingredients

  • 1 lb pasta (penne, rotini, or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1/2 cup kalamata olives, halved
  • 3/4 cup crumbled feta cheese
  • Homemade vinaigrette (olive oil, red wine vinegar or lemon juice, garlic, salt, black pepper)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and rinse with cold water.
  2. Prepare vegetables: halve tomatoes, dice cucumbers, slice onions, and halve olives.
  3. For the dressing, whisk together olive oil, vinegar or lemon juice, minced garlic, salt, and pepper.
  4. Combine cooked pasta with vegetables in a mixing bowl. Pour dressing over and toss to coat.
  5. Gently mix in feta cheese and fresh herbs.
  6. Chill for at least 30 minutes before serving.
