  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 1 can artichoke hearts (14 oz), drained and quartered
  • 1/2 cup pitted green olives, halved
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1/2 red onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, oregano, basil, and garlic powder.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken for about 3-4 minutes on each side until golden brown.
  4. Remove chicken and set aside. In the same skillet, sauté red onion and garlic until fragrant.
  5. Add artichoke hearts and olives; cook for another 2 minutes.
  6. Pour in chicken broth and white wine (if using). Stir in lemon juice and zest; bring to a simmer.
  7. Return chicken to the skillet, spooning some sauce over it.
  8. Bake for 20-25 minutes until chicken is cooked through.
