Ingredients
- 1 head green cabbage (900–1100 g)
- 3 tbsps olive oil
- 2 tbsps butter
- ½ cup finely diced red onion
- 4 cloves garlic (minced)
- 1 cup low-sodium chicken or vegetable broth
- 4 oz. full-fat cream cheese (softened)
- 1 cup heavy cream
- ½ cup sun-dried tomatoes (julienned)
- 1 tsp dried oregano leaves
- 1 tsp dried thyme leaves
- ½ tsp dried rosemary leaves
- 1 tsp table salt
- ½ tsp black pepper
- 1 tsp red pepper flakes (optional)
- ½ cup grated Parmesan cheese
- chopped fresh parsley (for garnish)
- extra Parmesan for serving (to taste)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the cabbage into eight wedges, keeping the core intact.
- In a cast iron skillet, heat olive oil over medium-high heat and sear the cabbage wedges until golden brown on both sides. Season with salt and pepper.
- In the same skillet, reduce heat to medium, add butter and onion; sauté until softened. Stir in garlic.
- Deglaze with broth, then whisk in cream cheese until smooth.
- Add heavy cream, sun-dried tomatoes, herbs, salt, pepper, and simmer for a few minutes.
- Stir in Parmesan cheese until melted.
- Nestle cabbage back into the skillet and spoon sauce over it.
- Cover and bake for about 45 minutes; uncover and baste with sauce for another 15–20 minutes or until tender.
