  • 1 head green cabbage (9001100 g)
  • 3 tbsps olive oil
  • 2 tbsps butter
  • ½ cup finely diced red onion
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken or vegetable broth
  • 4 oz. full-fat cream cheese (softened)
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes (julienned)
  • 1 tsp dried oregano leaves
  • 1 tsp dried thyme leaves
  • ½ tsp dried rosemary leaves
  • 1 tsp table salt
  • ½ tsp black pepper
  • 1 tsp red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • chopped fresh parsley (for garnish)
  • extra Parmesan for serving (to taste)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the cabbage into eight wedges, keeping the core intact.
  3. In a cast iron skillet, heat olive oil over medium-high heat and sear the cabbage wedges until golden brown on both sides. Season with salt and pepper.
  4. In the same skillet, reduce heat to medium, add butter and onion; sauté until softened. Stir in garlic.
  5. Deglaze with broth, then whisk in cream cheese until smooth.
  6. Add heavy cream, sun-dried tomatoes, herbs, salt, pepper, and simmer for a few minutes.
  7. Stir in Parmesan cheese until melted.
  8. Nestle cabbage back into the skillet and spoon sauce over it.
  9. Cover and bake for about 45 minutes; uncover and baste with sauce for another 15–20 minutes or until tender.
