- 320 g mango pulp
- 100 g granulated sugar
- 40 g cornstarch
- 600 g vegan cream cheese
- 120 g vegan Greek-style yogurt
- ½ teaspoon vanilla extract
- 30 g powdered sugar
- 500 g vegan cookies
- 3 tablespoons wild mango balsamic star
- 4 tablespoons hot water
- 2 fresh mangoes (finely diced)
Instructions
- Prepare the cream mixture by combining mango pulp, granulated sugar, and cornstarch until smooth. In another bowl, beat vegan cream cheese, yogurt, vanilla extract, and powdered sugar, then fold in the mango mixture.
- Soak the cookies by mixing wild mango balsamic star with hot water and additional mango pulp. Quickly dip each cookie into this mixture.
- Assemble the tiramisu by layering soaked cookies, cream mixture, and diced fresh mango in a baking dish. Repeat layers.
