  • 1 can (14 oz) coconut milk
  • 1 cup water
  • 1 1/4 teaspoons salt

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
  2. In a rice cooker or saucepan, combine rinsed rice, water, and salt. Cook according to rice cooker instructions or bring to a boil in the saucepan, then reduce heat and simmer for about 20 minutes.
  3. While the rice cooks, heat coconut milk in a separate saucepan over low heat until warm.
  4. Once cooked, let the rice sit covered for about 10 minutes. Stir in half of the warm coconut milk.
