Ingredients

Scale
  • 2 cups flour
  • 2 sticks soft butter
  • 2/3 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2/3 cup finely ground almonds
  • 1 egg
  • 1/2 cup seedless raspberry jam
  • Powdered sugar (for dusting)

Instructions

  1. Combine flour and ground almonds in a mixing bowl; set aside.
  2. In another bowl, cream soft butter and sugar until light and fluffy. Add egg and vanilla; mix well.
  3. Gradually incorporate the flour mixture into the butter-sugar mixture until just combined.
  4. Divide dough, shape into discs, wrap in plastic wrap, and refrigerate for 2 hours.
  5. Preheat oven to 350°F (175°C). Roll out one disc to 1/8 inch thick; cut shapes for cookie bottoms and place on parchment-lined baking sheets.
  6. Bake for 10-12 minutes until lightly browned; let cool before transferring to a wire rack.
  7. Roll out the second disc; cut out shapes with centers removed for tops, then bake as before.
  8. Assemble by spreading raspberry jam on each bottom cookie, topping with a cut-out top cookie.
  9. Dust with powdered sugar before serving.
