  • Glaze: 1 cup confectioners’ sugar + frozen raspberries + water

Instructions

  2. In a bowl, whisk together gluten-free flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add cornstarch mixture, milk, lemon juice, and zest; mix well.
  4. Gradually combine dry ingredients with the wet mixture; fold in chopped raspberries.
  5. Form dough balls, roll in sugar-zest mix, and place on the baking sheet.
  6. Bake for about 15 minutes or until edges are golden. Cool on wire rack.
  7. For the glaze, mash confectioners’ sugar with frozen raspberries and water; drizzle over cooled cookies.
