Ingredients
- 2 cups gluten-free flour
- 1/2 cup unsalted butter (or vegan alternative)

- 2 tablespoons fresh lemon juice

- Glaze: 1 cup confectioners’ sugar + frozen raspberries + water
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together gluten-free flour, baking powder, and salt.
- In another bowl, cream butter and sugar until fluffy. Add cornstarch mixture, milk, lemon juice, and zest; mix well.
- Gradually combine dry ingredients with the wet mixture; fold in chopped raspberries.
- Form dough balls, roll in sugar-zest mix, and place on the baking sheet.
- Bake for about 15 minutes or until edges are golden. Cool on wire rack.
- For the glaze, mash confectioners’ sugar with frozen raspberries and water; drizzle over cooled cookies.
