  • ¼ cup fresh lemon juice
  • 1 cup whole milk infused with 2 tablespoons dried lavender buds

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a small saucepan, heat milk over low heat and steep dried lavender buds for about five minutes. Remove from heat, let cool, then strain.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Incorporate lemon zest, lemon juice, and vanilla extract.
  5. Gradually add dry ingredients alternately with lavender-infused milk until just combined.
  6. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool in pans for ten minutes before transferring to a wire rack to cool completely.
