Description

  • ½ cup granulated sugar
  • ½ cup light brown sugar (packed)
  • ¾ teaspoon salt
  • ¼ teaspoon baking powder
  • 12 tablespoons unsalted butter (melted and cooled)
  • 1 can (14 oz) sweetened condensed milk
  • 4 large egg yolks (room temperature)
  • 2 tablespoons heavy cream
  • â…› teaspoon salt
  • â…” cup fresh lemon juice (about 45 lemons)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, granulated sugar, light brown sugar, salt, and baking powder. Add melted butter and mix until crumbly. Press firmly into the bottom of a greased 9×13 inch baking dish.
  3. Bake the crust for about 15 minutes until lightly golden, then let it cool slightly.
  4. In another bowl, whisk together sweetened condensed milk, egg yolks, heavy cream, salt, and fresh lemon juice until well combined. Pour over the cooled crust.
  5. Bake again for about 30 minutes until set; the center should not jiggle when shaken gently.
  6. Allow cooling completely before slicing into squares.
