  • 1/2 pound sliced corned beef deli meat
  • 1 cup sauerkraut
  • 1/4 cup mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 1/2 tbsp sugar-free ketchup
  • 2 tsp Swerve confectioner’s sugar substitute
  • 1 tbsp horseradish sauce
  • 1 pinch paprika

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. On a parchment-lined baking sheet, form 8 evenly sized circles using shredded Swiss cheese.
  3. Bake for 6–8 minutes until golden brown and crisp around the edges.
  4. While baking, mix mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve confectioner’s sugar substitute, horseradish sauce, and paprika until smooth.
  5. Once cheese circles are out of the oven, cool for about a minute before topping each with corned beef, sauerkraut, and dressing.
  6. Fold each circle over to create roll-ups before they harden completely.
  7. Allow roll-ups to cool fully to achieve that satisfying crunch.
