  • 1 egg
  • 2 small coriander roots
  • 2 tsp black peppercorns
  • 2 cloves garlic
  • 1/4 cup carrots (finely diced)
  • 2 tbsp green onions (finely chopped)
  • 2 dried shiitake mushrooms (soaked and finely chopped)
  • 3 tbsp golden mountain sauce
  • 1 1/2 tbsp white sugar
  • 2 1/2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 pack dumpling wrappers
  • 1 1/2 tablespoon sesame oil
  • garlic oil (to apply a small layer of oil to the wontons)
  • crispy fried garlic (to taste, for garnishing)

Instructions

  1. Prepare the spice mixture using a mortar and pestle to crush coriander roots, black peppercorns, and garlic.
  2. In a bowl, mix golden mountain sauce, white sugar, sesame oil, and oyster sauce until well combined.
  3. Blend ground pork with the sauce mixture, egg, and cornstarch until smooth.
  4. Combine this filling with the crushed spices and finely diced vegetables in a mixing bowl.
  5. Shape dumplings by placing wrappers over a spoon’s concave side, adding filling, moistening edges, folding up, and sealing.
  6. Steam the dumplings over medium heat for about 10 minutes until wrappers are translucent.
