- 14 oz or 3 1/4 cups ground pork
- 1 egg
- 2 small coriander roots
- 2 tsp black peppercorns
- 2 cloves garlic
- 1/4 cup carrots (finely diced)
- 2 tbsp green onions (finely chopped)
- 2 dried shiitake mushrooms (soaked and finely chopped)
- 3 tbsp golden mountain sauce
- 1 1/2 tbsp white sugar
- 2 1/2 tbsp oyster sauce
- 1 tbsp cornstarch
- 1 pack dumpling wrappers
- 1 1/2 tablespoon sesame oil
- garlic oil (to apply a small layer of oil to the wontons)
- crispy fried garlic (to taste, for garnishing)
Instructions
- Prepare the spice mixture using a mortar and pestle to crush coriander roots, black peppercorns, and garlic.
- In a bowl, mix golden mountain sauce, white sugar, sesame oil, and oyster sauce until well combined.
- Blend ground pork with the sauce mixture, egg, and cornstarch until smooth.
- Combine this filling with the crushed spices and finely diced vegetables in a mixing bowl.
- Shape dumplings by placing wrappers over a spoon’s concave side, adding filling, moistening edges, folding up, and sealing.
