  • 1 1/2 lbs ground pork
  • 1 large egg
  • 1/2 cup seasoned panko breadcrumbs
  • 4 cloves garlic, minced
  • 1/4 cup scallions, sliced
  • 2 tbsp jerk seasoning
  • 1 can (14 oz) full-fat coconut milk
  • 3 tsp Jamaican curry powder

Instructions

  1. In a large bowl, mix ground pork, egg, breadcrumbs, minced garlic, scallions, jerk seasoning, and salt/pepper until just combined.
  2. Form mixture into 20–22 meatballs using a medium spring-loaded scooper.
  3. In a non-stick skillet, heat butter and olive oil over medium heat; brown meatballs on all sides (about 3 minutes per side). Transfer to a plate.
  4. In the same skillet, sauté chopped shallots and garlic until fragrant. Add sliced bell peppers and cook until softened.
  5. Stir in Jamaican curry powder and pour in coconut milk; bring to a boil then reduce heat.
  6. Return meatballs to skillet; cover and simmer for 20–25 minutes until cooked through.
