Ingredients
- 1 lb pasta
- 1 cup marinated artichokes
- 1 cup black olives
- 1 cup stuffed green olives
- 1 cup pepperocini
- 1 cup diced ham
- 1 cup diced salami
- 3/4 cup olive oil
- 1/4 cup rice wine vinegar
- 1/4 cup lemon juice
- 1 teaspoon garlic – minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 cup Parmesan cheese – grated
- 1/2 cup fresh parsley – chopped
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large jar, combine olive oil, rice wine vinegar, lemon juice, garlic, onion powder, oregano, basil, red pepper flakes, and salt. Shake until emulsified.
- In a large bowl, combine the cooked pasta with chopped artichokes, olives, pepperocini, ham, salami, and half of the dressing. Toss gently.
- Garnish with grated Parmesan cheese and parsley. Drizzle remaining dressing if desired.
