Ingredients
- 14 oz cooked, shredded chicken
- 2 green onions
- 2 oz plain yogurt
- 4 oz mayonnaise
- 1.5 tsp Dijon mustard
- 1/2 carrot
- 1.5 oz spinach
- 1 oz tomatoes
- 1 celery stalk
- Juice and zest of 1/2 lemon
- 1 oz Parmesan cheese
- 6 tortillas (flour or whole wheat)
Instructions
- In a mixing bowl, combine shredded chicken, sliced green onions, yogurt, mayonnaise, Dijon mustard, grated carrot, chopped spinach, diced tomatoes, diced celery, lemon zest and juice, Parmesan cheese, black pepper, and dill. Mix until well combined.
- Warm tortillas slightly in the microwave or skillet to make them pliable.
- Lay one tortilla flat and add an appropriate amount of filling to the center. Fold in the sides and roll up tightly from the bottom.
- Repeat with remaining tortillas and filling. Serve immediately or cut into pinwheels for kids.
