  • 2 cups orzo pasta
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley for garnish
  • Juice of 1 lemon
  • 2 cups chicken broth

Instructions

  1. Cook the orzo in salted boiling water until al dente (8-10 minutes), then drain and set aside.
  2. Season chicken with salt, pepper, oregano, and basil. Heat olive oil in a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side until fully cooked. Slice and set aside.
  3. In the same skillet, sauté onion until translucent (3-4 minutes), then add garlic for another minute.
  4. Stir in cherry tomatoes and cook until softened (2-3 minutes), then add spinach and olives until spinach wilts.
  5. Pour in chicken broth and simmer for about 5 minutes.
  6. Add the orzo and sliced chicken to the skillet; mix well. Stir in feta cheese and lemon juice before serving.
