  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat your oven to 400°F (204°C). Slice the bell peppers in half lengthwise, remove seeds, and place cut-side up on a parchment-lined baking sheet. Brush lightly with olive oil.
  2. Bake the peppers for about 20 minutes until they begin to soften. Drain any excess water and lower the oven temperature to 350°F (176°C).
  3. In a microwave-safe bowl, wilt the spinach in the microwave for 15–30 seconds. Combine it in a large mixing bowl with ricotta, mozzarella, parmesan, green onions, basil, eggs, breadcrumbs, and seasoning; mix well.
  4. Stuff each pepper half generously with the ricotta filling and sprinkle with breadcrumbs mixed with oil.
  5. Bake again for about 30 minutes or until golden brown.
