Ingredients
- 125 g unsalted butter (room temperature)
- 60 g caster sugar
- 1 tsp vanilla extract
- 180 g plain flour (all-purpose)
- ¼ tsp fine salt
- 170 g strawberry jam
- 110 g powdered icing sugar
- 2 tbsp strawberry puree
- 1 tsp unsalted butter (melted)
- 30 ml milk
Instructions
- Cream together unsalted butter and caster sugar until light and fluffy. Mix in vanilla extract.
- Gradually add plain flour and fine salt until a dough forms.
- Roll out the dough to about 0.5 cm thick and cut into heart shapes using cookie cutters.
- Preheat oven to 180°C (350°F) and bake cookies for about 12 minutes until lightly golden. Cool on a wire rack.
- Prepare the glaze by mixing powdered icing sugar, strawberry puree, melted unsalted butter, and milk until smooth.
- Spread strawberry jam on half of the cooled cookies, sandwich with another cookie, dip in glaze, and let set.
