Ingredients
- 1 cup plain Greek yogurt
- 4 cloves garlic (minced)
- 2 lbs boneless, skinless chicken thighs
- 2 tablespoons fresh lemon juice
- 1 cup cucumber (grated)
- 1/2 cup crumbled feta cheese
- Pita bread wraps
- Fresh vegetables (lettuce, tomatoes, cucumber, onion)
Instructions
- In a large bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, oregano, cumin, paprika, coriander, salt, and pepper.
- Add chicken thighs to the marinade; coat evenly and refrigerate for at least 2 hours (overnight is best).
- Prepare tzatziki by squeezing excess water from grated cucumber and mixing it with yogurt, garlic, lemon juice, olive oil, dill, feta cheese, salt, and pepper. Refrigerate until ready to use.
- Preheat grill to medium-high heat. Grill marinated chicken for about 6–7 minutes per side until cooked through (165°F internal temp). Let rest for 5 minutes before slicing.
- Warm pita bread on the grill for about 30 seconds. Assemble gyros by spreading tzatziki on pita and topping with sliced chicken and fresh vegetables.
