  • 1 cup plain Greek yogurt
  • 4 cloves garlic (minced)
  • 2 lbs boneless, skinless chicken thighs
  • 2 tablespoons fresh lemon juice
  • 1 cup cucumber (grated)
  • 1/2 cup crumbled feta cheese
  • Pita bread wraps
  • Fresh vegetables (lettuce, tomatoes, cucumber, onion)

Instructions

  1. In a large bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, oregano, cumin, paprika, coriander, salt, and pepper.
  2. Add chicken thighs to the marinade; coat evenly and refrigerate for at least 2 hours (overnight is best).
  3. Prepare tzatziki by squeezing excess water from grated cucumber and mixing it with yogurt, garlic, lemon juice, olive oil, dill, feta cheese, salt, and pepper. Refrigerate until ready to use.
  4. Preheat grill to medium-high heat. Grill marinated chicken for about 6–7 minutes per side until cooked through (165°F internal temp). Let rest for 5 minutes before slicing.
  5. Warm pita bread on the grill for about 30 seconds. Assemble gyros by spreading tzatziki on pita and topping with sliced chicken and fresh vegetables.
