- 1/2 cup freshly grated Parmigiano Reggiano cheese

Instructions
- Preheat your oven to 425°F (220°C). Peel and slice the Russet potatoes into fries, rinse under cold water, and pat dry.
- In a large mixing bowl, combine the potato slices, olive oil, salt, pepper, garlic powder, and oregano. Toss until evenly coated.
- Spread the fries in a single layer on parchment-lined baking sheets and bake for 20-25 minutes until starting to soften.
- Flip the fries and sprinkle half of the cheese over them. Bake for an additional 10-15 minutes until golden brown.
