  • 4 Russet potatoes (peeled and sliced into 1/2-inch thick fries)
  • 3 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 1/2 cup freshly grated Parmigiano Reggiano cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Peel and slice the Russet potatoes into fries, rinse under cold water, and pat dry.
  2. In a large mixing bowl, combine the potato slices, olive oil, salt, pepper, garlic powder, and oregano. Toss until evenly coated.
  3. Spread the fries in a single layer on parchment-lined baking sheets and bake for 20-25 minutes until starting to soften.
  4. Flip the fries and sprinkle half of the cheese over them. Bake for an additional 10-15 minutes until golden brown.
