  • 2 heads garlic
  • 1 teaspoon olive oil
  • 8 ounces cream cheese, room temperature
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese
  • ½ cup grated parmesan cheese, divided
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon fresh chopped parsley, for garnish
  • Crostini or crackers, for serving

Instructions

  1. Preheat oven to 400°F. Trim the tops of the garlic heads and wrap them in aluminum foil with olive oil.
  2. Roast for about 50 minutes until soft; let cool.
  3. Lower oven temperature to 350°F. Squeeze roasted garlic into a mixing bowl and mash.
  4. Add cream cheese and sour cream; mix until smooth. Stir in mozzarella, half the parmesan, salt, and pepper.
  5. Spread mixture into a baking dish and top with remaining parmesan.
  6. Bake for about 28 minutes until bubbly and golden brown.
  7. Garnish with parsley and serve warm with crostini or crackers.
