  • 1/3 cup potato starch
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon five spice powder
  • 3/4 cup cold sparkling water
  • Neutral oil for frying
  • Additional salt
  • Furikake
  • Sweet chili sauce
  • Sriracha mayo

Instructions

  1. Prepare the enoki mushrooms by trimming the dirt end and slicing them vertically into thin layers.
  2. In a heavy-bottomed pot, heat neutral oil to 375°F (190°C).
  3. Combine flour, potato starch, baking powder, and spices in a mixing bowl; whisk in cold sparkling water until smooth.
  4. Dip each bunch of enoki mushrooms into the batter, allowing excess to drip off.
  5. Fry in small batches for 1-2 minutes until golden brown; remove with a spider strainer and place on a wire rack.
  6. Season with additional salt and furikake, then serve with dipping sauces.
